Vegan's Day

Just another manic monday...

Wow, I'm so glad Monday is over. It's always the longest, most tedious day of the week for me, as I'm sure is the case for many of you. I always end up sitting at my computer the whole day, trying to get so much work done, and I barely get a chance to go outside and see the sunlight. Deeepressing... But anyway~ At least I know Tuesday will be a bit easier~ :)

This past weekend was quite nice and chill. I didn't do a whole lot except plan for the upcoming bake sale, which by the way, is getting such positive response! yay! I'm so excited to start baking for it and also looking forward to meet some of you readers~~ The menu keeps changing because there are sooo many things I want to bake, but I'm trying to restrain myself or otherwise, I'll just go insane. I'll keep every one posted on any updates, etc. Please check out the Facebook event page and let us know whether you're coming! I would be helpful to get an idea of how many people to bake for~ Thanks!

Well, here are just some very random things I ate last week and this past weekend. I'm getting a bit lazy about photographing the things I eat, mainly because I'm not feeling too creative with my meals these days.

Mixed rice, veggies & mushrooms sauteed with tomato-garlic sauce, and kimchi.

Jook (rice porridge), containing whatever ingredients I had on-hand: brown rice, tofu, oyster mushrooms, broccoli, corn, onions, dwenjang paste, and dried seaweed.

It looks grey because the dried seaweed (nori sheets) dissolved in the cooking process. This was surprisingly tasty, considering I just threw whatever I had into a pot and let it bubble away.

Dos Tacos

On Thursday, a couple of my friends and I got together for dinner at Dos Tacos. That's the vegetable burrito. Lots of fresh veggies & kidney beans~

And here's 1 of 3 plates I had at the Achasan Loving Hut buffet. Kia, Sean and I got together there for dinner on Friday to plan the bake sale. :) Seriously, I'll never get sick of Achasan Loving Hut.

green smoothie

On Saturday morning, I went for a run at my gym and had this amazing green smoothie when I got back. I'm reeeally into green smoothies lately. I have them about 2-3 times a week and I always vary the greens, whether it be spinach, kale, or just regular lettuce. I've also been adding a scoop of protein powder for a lil extra 'oomph.' This one contained a handful of spinach, 1/2 banana, 1 scoop vanilla protein powder, 1/2 tbs ground flax seeds, and a pinch of stevia.

On a side note, I'm actually pretty proud of the fact that I'm still running these days. Since it's too cold outside, I've just been running at my gym. It's not ideal, but thankfully, the treadmills overlook a great view of the city and skies, so I don't feel so claustrophobic or like a hamster on a wheel. I never thought running could turn into a 'meditative' time for me, but it really has become a positive outlet in that respect. Running has just become a time when I get to sort through decisions, and get centered. If I go into the gym feeling stressed and overwhelmed, I come out clear-headed and ready to take on whatever the day has in store. These days I've been averaging about 35k each week and also incorporating some strength-training. I haven't signed up for my 10k race yet, but I plan on getting on that soon~

Anywayyy~ it's bed time now... About 7 hours til I gotta wake up and start Tuesday! nite nite~~
