Gingery Pumpkiny Biscotti

Today I baked some Gingerbread Biscotti from VCIYCJ, but tweaked the recipe by adding some pumpkin puree and making a few other minor changes. I also just did half the measurements and got about 14 small-ish biscotti. Can you tell that I'm really into baking biscotti these days? There are so many different flavors to try out, and I love that they're so crunchy and dunkable!

Pumpkiny Gingerbread Biscotti (adapted from VCIYCJ)

2 Tbs blackstrap molasses
1/3 cup sugar
1 Tbs ground flax seeds
3 Tbs canola oil
2 Tbs pumpkin puree
1/2 tsp vanilla extract
3/4 cup all purpose flour
1 tsp ground ginger
1 tsp ground cinnamon
1/4 tsp ground nutmeg
3/4 tsp baking powder
1/4 tsp salt

1. Preheat oven to 350F or 175C
2. Beat together the molasses, sugar, flax seeds, oil, and pumpkin puree with a whisk.
3. Sift and mix together the dry ingredients.
4. Add dry to the wet ingredients and mix together with a spoon until it all comes together.
5. Turn the dough out onto a baking sheet and use your fingers to form into a log, about 1.5-2cm thick.
6. Bake at 350F or 175C for 25 minutes, or until it has puffed up, feels firm, and has nicely browned on the top.
7. Remove from oven and let cool on a wire rack.
8. Using a sharp knife (I use a serrated knife), cut into strips and place back on baking sheet.
9. Bake again at 325F or 160C for about 10-15 minutes, or until it looks dry and toasted. Don't let it burn! :)
10. Remove from oven and let cool on wire racks. Enjoy!

The pumpkin taste is not that strong since there's only 2 Tbs of puree in the batch, but I like to think that it adds to the depth of flavor.

My friend Eric has gathered a handful of creative types to put together a renegade performance art & exhibition show at the adult Language Center where he works.
