A birthday, a giveaway, & a recipe!

Guess what. Today is my birthday! Another year wiser. :)

To celebrate my aging, I'd like to do a small birthday giveaway on my Facebook page, for my 10-pack of art postcards. All you have to do is go to this wall post and write your favorite vegan dish and where you're from. Then I'll pick two random winners, one person in Korea, and one overseas.

Anyway, not too much planned for this day~ I'm currently in Cheonan with my parents, and since it's my sister's birthday today too, we just did a family skype-chat which was nice. And then later this afternoon, I'll go back to Seoul for a mini birthday dinner with some close friends. I'm keeping things small and simple this year. I don't even know if I'll have time to make my vegan birthday cake! We shall see...

Anyway, here's a recipe for no-bake Peanut Butter Rice Krispie treats that I made last week. They're ridiculously easy and quick to put together. They're also super addicting so beware! I found that most online recipes for these bars are pretty similar, but here's what I did:

PB Rice Krispie Bars

3/4 cup sugar
3/4 cup brown rice syrup
3/4 cup smooth peanut butter
1/2 Tbs non-dairy margarine
6 cups rice krispie cereal
melted dark chocolate for topping (optional)

Grease a 9 x 13 inch pan with some oil. In a non-stick pan over medium heat, melt the sugar, syrup, peanut butter, and margarine just until it begins to simmer. Remove from heat and add rice krispies. Stir and transfer to a greased pan, pressing down firmly with a spatula or your fingers. Cover with melted chocolate (optional, but highly reccommended), and let cool before slicing and serving. Enjoy!

For those in Korea, make sure you get the right kind of rice cereal-- not the soft, styrofoam-textured ones that those ajushis sell by the street. Those don't work because they're not crispy at all. However, you can get rice krispie-type cereal at Homeplus, or the Foreign Food Mart in Itaewon. You can also get brown rice cereal online like GMarket, which would make these bars healthier.
