I'm really into kale these days. Especially the dinosaur kale that I get at E-Mart. The leaves are so humongous, they would make great summer parasols or hand-fans.^^

Here's a side dish I made with the dinosaur kale yesterday, along with some oyster mushrooms, zucchini, and chopped up black olives. Everything's just sauteed in some oil, with a bunch of random spices: dried basil, parsley, garlic, onion powder, thyme, red pepper flakes, salt, pepper... Very simple and very green.
