These 'Bran Muffins with Raisins' from 'The Joy of Vegan Baking' are the bomb! Fiber bombs! And that's definitely a good thing. We all need more fiber in our diets to stay regular, rah? Not only are these completely healthy, are really yummy too.
I love the nuttiness of the wheat fiber and the touch of sweetness from the raisins. These are pretty much the ideal muffins for breakfast or brunch, served with some coffee and fresh fruit.
I baked a batch, packed em up, and took 'em to my friends Grace & Alex's office. They liked em! Even Grace's aunt took two for herself and was surprised when she found out that I baked them- and vegan at that. :)
